Islay is a peaty island to the south west of Scotland where high winds drive salty seawater and seaweed far inland. This mishmash of peat, salt and seaweed flavor the river waters that go into the island's highly prized malts.
The rivers that provide the water are brown - turned to a murky darkness by the peat soil.
Caol Ila means 'sound of Islay' and it is pronounced col eela. It was founded in 1846 and by the 1880s its popularity was such that 147,000 gallons was produced each year.
During the early part of the last century there were a number of takeovers but eventually the distillery was bought by drinks giant Diageo.
The distillery underwent a complete rebuild in the 1970s but the new building's design has maintained the feel of the original and the
whisky remains among the best Scotch you can get.
