MATHILDE CASSIS LIQUEUR

Mathilde liqueurs come from Paris and are made by steeping strong alcohol in ripe, fresh fruit for several weeks. Pure water is added to lower the alcoholic strength until the process is complete and the fruit can be removed. Finally, some cane syrup is added to balance the flavors and acidity. Made from wild blackcurrant. Since the 18th century blackcurrant liqueur has been made in several regions in France where it is known as the elixir of life. Two varieties of blackcurrant go into Mathilde Cassis: Noir de Bourgogne and Blackdown. Noir de Bourgogne has excellent taste qualities and the reputation of being the best blackcurrant to eat. Blackdown is a soft, sweet variety.
