HIGH WEST RYE WHISKEY

This rye is given a distinctive flavor by a recipe that contains a higher-than-normal amount of unmalted rye. It is also not chill filtered - a process undertaken by some whiskey-makers to remove natural oils that cause a haze when the drink is cold. The makers of High West believe this cosmetic consideration removes not only the haziness, but also some of the flavor, texture and lingering finish. The name for this whiskey comes from the first recorded festival of whiskey, which was known as the Rendezvous. The get-together was originally organised as an opportunity for mountain-men to stock up on annual supplies at Utah's Cache Valley but soon became a festival of good liquor. It is bottled once it reaches six years of age and has a 95 per cent rye content. The older, 16-year-old version has a rye content of 80 per cent.
