At Ocho they experiment with the effects of climate on the agave and how that impacts the final product. To do this they use the micro-climates of the agave farm in the village of Arandas, 6,500 feet above sea level. Agave from different areas where there are slight variations in the climate give a surprisingly varied end product. So every vintage of the Ocho Plata will offer something different. The 2010 Plata was harvested from the 'Los Corrales' estate at over 6,000 feet and the agave used was nine years old when harvested.
