A meticulous process is involved in making this single malt from the distillers at St George in Alameda, California. First off the barley is separated and some of it is roasted to varying degrees. The rest is smoked. The variety of roasts elicits different flavors and aromas while smoking over beech and alder adds complexity. To prevent all that roasting and smoking creating an overpowering firewater, St George barrel age in a variety of casks to allow the flavors mellow out and soften. Each bottling is different as the barrels used to age the whiskey get older but all that roasted smoky flavor comes through with cocoa and nuts.
