LA FORTALEZA BLANCO
Known in Mexico as Los Abuelos, Fortaleza first became available in America in 2007. The distillery is located in the town of Tequila in Jalisco, Mexico at an altitude of 4,000 feet and has a long history. In 1856 Don Cenobio arrived in Tequila and soon began his own brand of the famous liquor. By the third generation his dynasty was the number one tequila producer in the world before it was sold to Pedro Comecq in 1976. But Don Cenobio's descendants held on to an old, derelict distillery which they restored in 1999. Ignoring the modern methods of tequila production, they returned to the traditions fostered by their family more than 100 years earlier. They cook the agave for 36 hours in the old-style brick oven with meter-thick walls. The raw ingredient is then washed with pure mountain water from the Volcan de Tequila and naturally fermented for five days in small wood vats. Double distillation provides purity before it is poured into these beautiful hand-blown bottles, made by artisan glass makers and plugged with a ground marble stopper designed to look like a pina.
