2005, Cabernet Sauvignon, New South Wales, Australia This impressive young Cab is deep, ripe, subtly earthy and attractively oaky, offering scents of dark cherry, currant, vanilla, baking spice, toffee and hints of dried herbs. In the mouth, it proves rich in body and very flavorful, with its cherry and currant tones dominating on the mid-palate, over sage and earth hints and some creamy vanilla. The finish is rich and lingering, but is blunted a bit as yet, by tannic stiffness. Best with rich stews and steaks at this point, it should grow in clarity and elegance over the next several years. The fruit for this wine is primarily from Andy Beckstoffer?s celebrated Tokalon and Dr. Crane vineyards.
