2007, Pinot Noir, Santa Rita Hills, CA
Rancho Santa Rosa's Pinot Noir grapes are hand picked and sorted over the course of September and October. All grapes are carefully de-stemmed and crushed, then gently moved to small bins or open top tanks. The caps are punched-down by hand three times daily during fermentation to extract color and flavor. The young wine is then pressed and transferred to a combination of new and seasoned French oak barrels for up to 16 months ageing followed by careful racking before bottling. Crimson in color, Rancho Santa Rosa Pinot Noir is redolent of dark fruits, vanilla and spice.
