Straight vodka made with Biodynamic? Chambourcin grapes grown at Jack Rabbit Hill, where the Peak Spirits distillery is located (Jack Rabbit Hill and Peak Spirits are demeter-certified biodynamic). The grapes are wild-fermented. No commercial yeasts or other additives are used to alter the character of the fruit. Research shows that native yeasts-which form and exist naturally on healthy, clean grapes-produce higher concentrations of glycerol during fermentation than artificial fermentations. Glycerol is the stuff that makes CapRock's mouthfeel and finish so round and rich. Also, the grapes are fermented and distilled whole, including skins and seeds, contributing soft fruit tannins to the long, textured finish. The redisitilled Biodynamic grape spirit is then added to organic neutral wheat spirit and charcoal-fined before bottling.
